If you are mining oil, the oil is stuck in the tar sands. Lots of clean water is being used to estract the oils from the sand. The sand might also be dumped in the waters also causing more damage to the water that we have.

If you mean mining metals like gold, water is used to clean the dirt and separate the gold from the rocks. the water that comes out of this process is dumped back in the rivers that the came from causing more pollution.
