Some variables include pH, the concentration of the enzyme, temperature, and the concentration of the substrate.
Explanation:
The major one (and the only you will probably need to know for the test) is temperature. As the temperature and the pH reach their optimal points, the enzyme activity will go up. Here's a graph to visualize it.
