Entropy increases in both instances.

Explanation:

The phase change from a condensed to a gaseous phase represents a clear, and readily appreciated increase in entropy. Likewise, the dissolution of a solid in a solvent (sugar in water) gives a greater statistical probability of disorder (i.e. entropy!).
