Embalming fluid contains the simplest aldehyde, H2C=O, and was traditionally used by undertakers. Acrolein, or propenal, H2C=CHC(=O)H has a pretty foul odour, and it is responsible for the penetrating smell you get from old cooking oil in fish and chip shops. Benzaldehyde, PhC(=O)H, is used to impart almond flavour. Cinnamaldehyde, trans-PhCH=CHC(=O)H, is the essential oil you get from cinnamon bark (finally a nice smell!).
