The separation, identification and determination of an analyte (what you are looking for) in a sample.
This involves techniques such as:
- Gravimetric Analysis (mass)
- Volumetric Analysis (volume - titrations)
- Optical Analysis (Spectroscopy, refractive index)
- Electrical Analysis (Electrochemistry: galvanic, electrolysis)
- Separation Techniques (Chromatography, separation funnel)
Analytical Chemists basically perform analysis to quantify (determine amount) and qualify, determine what compounds there are, of species in samples.
Useful because quality of raw materials, intermediate products and final products can be determined and whether or not products that are manufactured or of raw materials purchased are in accordance to the specifications of that product such that it is safe for the marketplace, either for use or for consumption etc.
Analytical Chemists are also in Forensics, so that unknown substances that form part of evidence can be analysed to determine what it is and where its from, so that criminals can be tracked and found.
