Why water isnt used in thermometer?

Water has too high of a freezing point and too low of a boiling point.

Explanation:

Once it hits 32 degrees F (0 degrees C), the water would freeze. If used as a cooking thermometer, water would boil at 212 degrees F (100 degrees C).
