Glucose is a singular, individual molecule...known as a monomer. In its alpha conformation, if it polymerizes (joins hands with a bunch of other glucose units), it can form the very large unit called starch. Starch is a polymer.

It is like this - if you were at a football game, there might be 50,000 people there. Each of you is individual (Glucose). If you all went down on the field and held hands with someone else, you'd all be a huge mass of interlocked people - one group, one unit. this would be the starch.
