How do amino acids react to water and oil?

By themselves, amino acids are fairly unreactive. They are diprotic and triprotic acids, and their only reactions in water are protonation and deprotonation.
In oil, there is generally no reaction. They don't have reactive groups other than the acidic parts, and generally oils are very unreactive. A protein will unfold in oil, but thats not a chemical reaction.
