Axis of symmetry x=1

Explanation:

Given -

y=-(x-3)(x+1)

y=(-x+3)(x+1)
y=-x^2+3x-x+3
y=-x^2+2x+3

Vertex

x=(-b)/(2a)=(-2)/(-2)=1

At x=1

y=-(1^2)+2(1)+3=-1+2+3=4

Vertex(1,4)
Axis of symmetry x=1

Take a few values above and below x=1
Form a table, after finding the y values.
