How do amino acids affect enzymes?

This is a very broad question. Amino acids are the building blocks of enzymes (except ribozymes).
Explanation:
Enzymes are usually proteins. They have a target that they catalyze the reaction of.
The protein is built from amino acids...and so other than actually making the enzyme, the enzyme isn't affected by a bunch of amino acids (unless that enzyme is involved in a reaction that uses amino acids in some form).
This is somewhat like saying, "Lego pieces are used to make the Lego DeathStar - how do Lego pieces affect the Lego DeathStar?"
